Directions
Preheat Oven
- Preheat your oven to 190°C (375°F). Lightly grease a small baking dish with butter or oil.
Prepare the Zoodles
- Spiralize the courgette. If it's very watery, lightly salt and let sit in a colander for 10 minutes, then pat dry with paper towels.
Make the Alfredo Sauce
- In a pan over medium heat, melt the butter. Add the minced garlic and cook until fragrant (about 30 seconds). Add the double cream, a pinch of salt, pepper, and optional nutmeg. Simmer gently for 2–3 minutes.
Add the Cheese
- Stir in the parmesan cheese until melted and the sauce thickens. Remove from heat.
Combine with Tuna and Zoodles
- In a bowl, mix the zoodles, tuna, and Alfredo sauce. Toss well to coat.
Bake
- Transfer the mixture to the prepared baking dish. Top with mozzarella cheese if using, and bake for 15–20 minutes, or until bubbly and golden on top.
