Prepare the pork chops
- Pat pork chops dry with paper towel.
- Season both sides generously with salt, pepper, and optional herbs (e.g. thyme).
Sear the pork
- Heat olive oil in a large frying-pan over medium-high heat.
- Add pork chops and sear for 3–4 minutes per side, until golden and cooked through (internal temp should be 63°C / 145°F).
- Remove from pan and set aside, keeping them warm.
Sauté garlic and mushrooms
- In the same skillet, lower the heat to medium.
- Add butter and let it melt.
- Add minced garlic and cook for 30 seconds (don’t burn it).
- Add mushrooms and sauté for 4–5 minutes, until softened and lightly golden.
Add spinach and cream
- Add spinach and stir until wilted (about 1–2 minutes).
- Pour in the double cream and stir.
- Simmer for 2 minutes, then add grated Parmesan.
